Paris and Wilmington, Massachusetts, October 7th / PRNewswire / -- The wine and spirits division of LVMH, the global semiconductor company Analog Devices, Inc. ( ADI ) as well as the University of California, Davis ( University of California , Davis ) today announced a groundbreaking joint collaboration to deploy a new generation of technology aimed at enhancing wine quality and supporting the long-term vitality of vineyards.

This collaboration is built on a breakthrough technology that traces its origins to early research at the Massachusetts Institute of Technology ( MIT ). Today, ADI continues to advance this technological platform for analyzing chemical characteristics in a wide range of applications; at the same time, it collaborates with teams from Mo , Hennessy , and UC Davis to explore its uses in grape cultivation and winemaking. The joint project aims to detect and interpret the volatile chemical characteristics released by grapevines, grape juice, and wine, thereby enabling grape cultivation and winemaking teams to gain earlier insights into biological processes and potential quality risks.

World's first demonstration: predicting before the aroma of fresh mushrooms appears

The first major achievement of this collaboration targets one of the most complex quality challenges in the wine industry: the aroma of fresh mushrooms ( Fresh Mushroom Aroma, FMA ). Researchers from the Mo ët Hennessy Robert-Jean de Vog üé research center have established a unique dataset and related database to train machine learning algorithms to identify chemical characteristics associated with this quality risk.

For the first time, this technology successfully identified samples with a higher risk of FMA development at an early stage, long before traditional methods could detect defects. Mo and Hennessy indicate that this breakthrough has created entirely new possibilities for proactive quality management, making earlier intervention possible and fundamentally changing the way quality risks are monitored during the brewing process.

With the support of the ADI sensing and machine learning platform, this system analyzes a wide range of chemical information and uses AI to identify which signals are the most important, thereby revealing patterns that might otherwise be overlooked. This platform does not merely look for preset conditions; instead, it continuously learns from complex chemical data to gain a deeper understanding of biological activities and newly emerging quality risks.

A technology platform with a variety of future application scenarios

Apart from FMA, all parties believe that this technology can be extended to become a platform for life system analysis. It is potentially applicable to any biological process that produces measurable, interpretable, and actionable meaningful chemical characteristics. Other applications under study include early detection of grapevine diseases, soil assessment, and the identification of other defects, especially those related to climate change and related events such as wildfires.
